Ingredients

- 2 cups cooked rice (day-old preferred)
- 1 pound shrimp, peeled and deveined
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 2 teaspoons sesame oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat the sesame oil in a large skillet over medium-high heat until shimmering.
- Cook the shrimp for about 3–4 minutes, until they turn rosy pink and opaque, then remove and set aside.
- Sauté the mixed vegetables in the same skillet for 2–3 minutes until softened.
- Move the veggies to one side and pour in the beaten eggs, scrambling until fluffy.
- Incorporate the shrimp back into the skillet with cold rice, soy sauce, and oyster sauce, stirring until heated through.
- Season with salt and pepper, then top with chopped green onions before serving.
Notes
Use day-old rice for best results. Customize with different proteins or vegetables as desired.
