Description

A delightful blend of shrimp, vegetables, and rice, perfect for any occasion.


Ingredients

  • 2 cups cooked rice (day-old preferred)
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons sesame oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil in a large skillet over medium-high heat until shimmering.
  2. Cook the shrimp for about 3–4 minutes, until they turn rosy pink and opaque, then remove and set aside.
  3. Sauté the mixed vegetables in the same skillet for 2–3 minutes until softened.
  4. Move the veggies to one side and pour in the beaten eggs, scrambling until fluffy.
  5. Incorporate the shrimp back into the skillet with cold rice, soy sauce, and oyster sauce, stirring until heated through.
  6. Season with salt and pepper, then top with chopped green onions before serving.

Notes

Use day-old rice for best results. Customize with different proteins or vegetables as desired.
