A hearty and flavorful chili made with tender short ribs, perfect for a cozy meal.
Ingredients

- 2 lbs short ribs
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 bell peppers, diced
- 1 can (28 oz) crushed tomatoes
- 2 cups beef broth
- 1 can (15 oz) kidney beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Season the short ribs with salt and pepper, then brown them on all sides.
- Remove the short ribs and set aside.
- Add the chopped onion, garlic, and bell peppers to the pot and sauté until softened.
- Stir in the chili powder and cumin, cooking for an additional minute.
- Add the crushed tomatoes, beef broth, and kidney beans to the pot.
- Return the short ribs to the pot, bring to a boil, then reduce heat and simmer for 2-3 hours until the meat is tender.
- Remove the short ribs, shred the meat, and return it to the chili.
- Adjust seasoning with salt and pepper before serving.
Notes
- For a spicier chili, add diced jalapeños or cayenne pepper.
- Serve with cornbread or over rice for a complete meal.
- This chili can be made a day ahead and tastes even better the next day.
