Description

Ingredients

  • 2 lbs short ribs
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 bell peppers, diced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups beef broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season the short ribs with salt and pepper, then brown them on all sides.
  3. Remove the short ribs and set aside.
  4. Add the chopped onion, garlic, and bell peppers to the pot and sauté until softened.
  5. Stir in the chili powder and cumin, cooking for an additional minute.
  6. Add the crushed tomatoes, beef broth, and kidney beans to the pot.
  7. Return the short ribs to the pot, bring to a boil, then reduce heat and simmer for 2-3 hours until the meat is tender.
  8. Remove the short ribs, shred the meat, and return it to the chili.
  9. Adjust seasoning with salt and pepper before serving.

Notes

  • For a spicier chili, add diced jalapeños or cayenne pepper.
  • Serve with cornbread or over rice for a complete meal.
  • This chili can be made a day ahead and tastes even better the next day.
