- 1 pound large shrimp, peeled and deveined
- 1 pound baby potatoes, halved
- 2 ears of corn, cut into thirds
- 4 tablespoons olive oil
- 2 tablespoons Old Bay seasoning
- 1 lemon, sliced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the potatoes with olive oil, Old Bay seasoning, salt, and pepper.
- Spread the potatoes on a sheet pan and roast for 20 minutes.
- Add the corn and shrimp to the sheet pan, and toss everything together.
- Return to the oven and roast for an additional 10-15 minutes, until the shrimp are cooked through.
- Remove from the oven, garnish with lemon slices, and serve hot.
