- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 1 cup fresh baby spinach, chopped
- ¼ cup fresh parsley, chopped
- ¼ cup fresh basil, chopped
- 4 large tortillas or wraps
- Olive oil, for drizzling
- Fresh herbs, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the baking dish by greasing it with olive oil or cooking spray.
- Combine the filling by mixing mozzarella, Parmesan, garlic, onion powder, smoked paprika, oregano, basil, salt, and pepper in a bowl.
- Create pockets in each chicken breast by slicing through the thick side, avoiding cutting all the way through.
- Stuff each chicken pocket with the cheese-herb mixture and fold in spinach if desired.
- Wrap each stuffed chicken breast in a tortilla, securing with toothpicks if needed.
- Place the wraps seam-side down in the greased baking dish, drizzle with olive oil, and sprinkle with herbs.
- Cover with aluminum foil and bake for 20 minutes to cook through.
- Remove the foil and bake uncovered for an additional 15-20 minutes until golden brown.
- Let the wraps rest for a few minutes before slicing and garnish with fresh herbs.
