Ingredients

  • 1 cup cooked sausage, crumbled
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon butter (for cooking)
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt the butter in a skillet over medium heat, then add the crumbled sausage.
  3. Cook until browned and fragrant, stirring frequently.
  4. Whisk the eggs in a mixing bowl, then pour them into the skillet with the sausage.
  5. Cook until the eggs are just set, seasoning with salt and pepper.
  6. Roll out the puff pastry on a floured surface, cutting it into 4×4 inch squares.
  7. Fill each square with the sausage, egg, and cheese mixture.
  8. Fold the pastry over to form pockets and seal the edges with a fork.
  9. Brush the tops with the egg wash for a golden finish.
  10. Bake for 15-18 minutes until golden brown.
  11. Let cool slightly before serving.
