Instructions
- Preheat your oven to 400°F (200°C).
- Melt the butter in a skillet over medium heat, then add the crumbled sausage.
- Cook until browned and fragrant, stirring frequently.
- Whisk the eggs in a mixing bowl, then pour them into the skillet with the sausage.
- Cook until the eggs are just set, seasoning with salt and pepper.
- Roll out the puff pastry on a floured surface, cutting it into 4×4 inch squares.
- Fill each square with the sausage, egg, and cheese mixture.
- Fold the pastry over to form pockets and seal the edges with a fork.
- Brush the tops with the egg wash for a golden finish.
- Bake for 15-18 minutes until golden brown.
