- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil

- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 1/4 cup heavy cream
- 1/2 cup salted caramel sauce
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Combine the grated carrots, granulated sugar, brown sugar, vegetable oil, and eggs in a large mixing bowl. Mix until well blended.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl. Gradually add this dry mixture to the carrot mixture, folding until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes.
- Allow the cakes to cool for 10 minutes in the pans, then turn them out onto wire racks to cool completely.
- Beat the cream cheese and butter together until creamy. Gradually add the powdered sugar, mixing until smooth. Add in the heavy cream.
- Assemble the cake by placing one layer on a serving plate, frosting the top with cream cheese frosting, and drizzling with salted caramel. Add the second layer and frost the top and sides.
- Drizzle more salted caramel over the frosted cake before slicing and serving.
