Ingredients

  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour

  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1/2 cup salted caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the grated carrots, granulated sugar, brown sugar, vegetable oil, and eggs in a large mixing bowl. Mix until well blended.
  3. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl. Gradually add this dry mixture to the carrot mixture, folding until just combined.
  4. Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes.
  5. Allow the cakes to cool for 10 minutes in the pans, then turn them out onto wire racks to cool completely.
  6. Beat the cream cheese and butter together until creamy. Gradually add the powdered sugar, mixing until smooth. Add in the heavy cream.
  7. Assemble the cake by placing one layer on a serving plate, frosting the top with cream cheese frosting, and drizzling with salted caramel. Add the second layer and frost the top and sides.
  8. Drizzle more salted caramel over the frosted cake before slicing and serving.
