  • 1/2 cup heavy cream
  • Chopped pistachios for garnish (optional)

Instructions

  1. In a saucepan, combine the Arborio rice, whole milk, sugar, and salt. Bring to a gentle boil over medium heat.
  2. Reduce the heat to low and simmer, stirring frequently, until the rice is tender and the mixture thickens, about 20-25 minutes.
  3. In a small bowl, soak the saffron threads in a tablespoon of warm water for about 5 minutes.
  4. Add the saffron mixture and vanilla extract to the rice pudding, stirring well to combine.
  5. Remove from heat and stir in the heavy cream for added richness.
  6. Let the pudding cool slightly before serving. It can be served warm or chilled.
  7. Garnish with chopped pistachios if desired.

Notes

  • For a richer flavor, you can substitute some of the whole milk with coconut milk.
  • This pudding can be made a day in advance and stored in the refrigerator.
