- 4 cups whole milk

- 1/2 cup heavy cream
- Chopped pistachios for garnish (optional)
Instructions
- In a saucepan, combine the Arborio rice, whole milk, sugar, and salt. Bring to a gentle boil over medium heat.
- Reduce the heat to low and simmer, stirring frequently, until the rice is tender and the mixture thickens, about 20-25 minutes.
- In a small bowl, soak the saffron threads in a tablespoon of warm water for about 5 minutes.
- Add the saffron mixture and vanilla extract to the rice pudding, stirring well to combine.
- Remove from heat and stir in the heavy cream for added richness.
- Let the pudding cool slightly before serving. It can be served warm or chilled.
- Garnish with chopped pistachios if desired.
Notes
- For a richer flavor, you can substitute some of the whole milk with coconut milk.
- This pudding can be made a day in advance and stored in the refrigerator.
