Description

Delight in the exotic flavors of rum-soaked fried pineapple, a dish that transforms a humble fruit into a luxurious dessert with a crispy coating and a tropical dipping sauce.

Ingredients

Scale
  • 8 Pineapple Rings (fresh or canned)
  • 1 cup Dark Rum
  • 1 cup Coconut Rum
  • 1 ½ cups All-Purpose Flour
  • 10 oz Sweetened Coconut Flakes
  • 2 Large Eggs
  • ½ cup Coconut Milk
  • Vegetable Oil (for frying)
  • 4 oz Cream Cheese (softened)
  • ½ cup Powdered Sugar

Instructions

  1. Soak the pineapple rings in dark and coconut rums for at least 1 hour, then drain and pat them dry.
  2. Create a coating station with three shallow bowls: one with flour, one with a whisked mixture of eggs and coconut milk, and one with coconut flakes.
  3. Coat each pineapple ring: dip in flour, then in egg mixture, and finally in coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C).
  5. Fry the coated rings for about 1 minute on each side until golden brown.
  6. Drain fried rings on paper towels.
  7. Make the dipping sauce by blending cream cheese, powdered sugar, and a splash of reserved rum until smooth.

Notes

Make-ahead by soaking pineapple rings the night before for deeper flavor. For a healthier alternative, consider air frying or baking the rings.
