- ½ cup Powdered Sugar
Instructions
- Soak the pineapple rings in dark and coconut rums for at least 1 hour, then drain and pat them dry.
- Create a coating station with three shallow bowls: one with flour, one with a whisked mixture of eggs and coconut milk, and one with coconut flakes.
- Coat each pineapple ring: dip in flour, then in egg mixture, and finally in coconut flakes.
- Heat vegetable oil in a deep pot to 350°F (175°C).
- Fry the coated rings for about 1 minute on each side until golden brown.
- Drain fried rings on paper towels.
- Make the dipping sauce by blending cream cheese, powdered sugar, and a splash of reserved rum until smooth.
