- 1/2 cup grated Parmesan cheese

Instructions
- Preheat the oven to 400°F (200°C).
- Cook the penne pasta according to package instructions until al dente, then drain.
- Toss the mixed vegetables with olive oil, Italian seasoning, salt, and pepper, then spread them on a baking sheet.
