Ingredients

- 1 bunch of radishes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups mixed greens
- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 tablespoons balsamic vinegar
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and trim the radishes, then cut them in half.
- Toss the radishes with olive oil, salt, and pepper.
- Spread the radishes on a baking sheet and roast for 20-25 minutes until tender.
- In a large bowl, combine the mixed greens, roasted radishes, feta cheese, and walnuts.
- Drizzle with balsamic vinegar and toss gently to combine.
