Ingredients

- 1 head of cauliflower, cut into florets
- 1 whole bulb of garlic
- 2 tablespoons olive oil
- 1/4 cup milk (or dairy-free alternative)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the garlic bulb in aluminum foil and roast in the oven for about 30-35 minutes until soft.
- Meanwhile, steam the cauliflower florets until tender, about 10-15 minutes.
- Once the garlic is roasted, squeeze the cloves out of their skins into a mixing bowl.
- Add the steamed cauliflower, olive oil, and milk to the bowl.
- Use a potato masher or blender to mash until smooth and creamy.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.
Notes
- For a vegan version, use a dairy-free milk alternative.
- Adjust the amount of garlic based on your preference for garlic flavor.
- This dish can be made ahead of time and reheated before serving.
