Ingredients

- 4 medium beets, roasted and peeled
- 2 large oranges, segmented
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 cups mixed greens
- 1/4 cup walnuts, toasted
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the beets in aluminum foil and roast for about 45-60 minutes until tender.
- Once cooled, peel the beets and slice them into wedges.
- In a large bowl, combine the roasted beets, orange segments, red onion, and mixed greens.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Top with crumbled feta cheese and toasted walnuts before serving.
Notes
- For added flavor, marinate the onions in vinegar for 10 minutes before adding to the salad.
- Feel free to substitute goat cheese for feta if preferred.
