Ingredients

  • 4 medium beets, roasted and peeled
  • 2 large oranges, segmented
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 cups mixed greens
  • 1/4 cup walnuts, toasted
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the beets in aluminum foil and roast for about 45-60 minutes until tender.
  3. Once cooled, peel the beets and slice them into wedges.
  4. In a large bowl, combine the roasted beets, orange segments, red onion, and mixed greens.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  6. Drizzle the dressing over the salad and toss gently to combine.
  7. Top with crumbled feta cheese and toasted walnuts before serving.

Notes

  • For added flavor, marinate the onions in vinegar for 10 minutes before adding to the salad.
