Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
- Fold in the whipped cream until well combined.
- Place cupcake liners in a muffin tin and fill each liner with a layer of crushed graham crackers.
- Pour the cheesecake mixture over the graham cracker layer.
- Bake for 15-20 minutes or until set.
- Let cool completely, then refrigerate for at least 2 hours.
