- 2 packs Ramen Noodles
- 4 cups Crispy Cabbage (Napa or green cabbage)
- 1 cup Mandarin Oranges
- 1/4 cup Low-Sodium Soy Sauce
- 2 tbsp Sesame Oil
- 2 tbsp Rice Vinegar
- 2 tsp Sugar
- 1/4 cup Green Onions (optional)
- 2 tbsp Sesame Seeds (optional)
Instructions
- Cook the ramen noodles according to the package instructions, then drain and rinse under cold water until chilled.
- Combine the crispy cabbage, sweet mandarin oranges, and cooled ramen noodles in a large mixing bowl.
- Prepare the dressing by whisking together the soy sauce, sesame oil, vinegar, and sugar until smooth.
- Dress the salad mixture with the dressing, tossing gently to coat.
- Add green onions and sprinkle sesame seeds on top if desired.
- Serve the salad chilled after allowing it to sit in the refrigerator for at least 30 minutes.
Notes
Make-ahead: Prepare several hours or the day before, adding the dressing just before serving. Consider adding shredded carrots or bell peppers for more crunch.
