Description

A vibrant Ramen Noodle Salad combining crunchy cabbage, sweet mandarin oranges, and a flavorful dressing for a refreshing dish.


Ingredients

  • 2 packs Ramen Noodles
  • 4 cups Crispy Cabbage (Napa or green cabbage)
  • 1 cup Mandarin Oranges
  • 1/4 cup Low-Sodium Soy Sauce
  • 2 tbsp Sesame Oil
  • 2 tbsp Rice Vinegar
  • 2 tsp Sugar
  • 1/4 cup Green Onions (optional)
  • 2 tbsp Sesame Seeds (optional)

Instructions

  1. Cook the ramen noodles according to the package instructions, then drain and rinse under cold water until chilled.
  2. Combine the crispy cabbage, sweet mandarin oranges, and cooled ramen noodles in a large mixing bowl.
  3. Prepare the dressing by whisking together the soy sauce, sesame oil, vinegar, and sugar until smooth.
  4. Dress the salad mixture with the dressing, tossing gently to coat.
  5. Add green onions and sprinkle sesame seeds on top if desired.
  6. Serve the salad chilled after allowing it to sit in the refrigerator for at least 30 minutes.

Notes

Make-ahead: Prepare several hours or the day before, adding the dressing just before serving. Consider adding shredded carrots or bell peppers for more crunch.
