- 2 cups rolled oats
- 1 cup nuts (walnuts or pecans)
- 1/2 cup pumpkin seeds
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 cup pumpkin puree
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup dried cranberries or raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, nuts, pumpkin seeds, pumpkin pie spice, and salt.
- In another bowl, mix together the maple syrup, melted coconut oil, and pumpkin puree until well combined.
- Pour the wet ingredients into the dry ingredients and stir until everything is evenly coated.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, stirring halfway through, until golden brown.
- Remove from the oven and let it cool completely. Stir in dried cranberries or raisins if using.
- Store in an airtight container for up to two weeks.
