Ingredients

  • 2 cups heavy cream
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 6 large egg yolks
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, combine heavy cream, pumpkin puree, granulated sugar, vanilla extract, and pumpkin pie spice. Heat over medium heat until just simmering.
  3. In a bowl, whisk the egg yolks until smooth.
  4. Slowly pour the warm cream mixture into the egg yolks, whisking constantly to prevent curdling.
  5. Strain the mixture through a fine-mesh sieve into a large measuring cup.
  6. Pour the mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
  7. Bake for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.
  8. Remove from the oven and let cool. Refrigerate for at least 2 hours or overnight.
  9. Before serving, sprinkle brown sugar on top of each crème brûlée and use a kitchen torch to caramelize the sugar until golden and crispy.

  • For a stronger pumpkin flavor, use more pumpkin puree.
  • Make sure to let the crème brûlée cool completely before adding the sugar topping.
