A deliciously creamy and spiced dessert that combines the flavors of pumpkin and warm spices, perfect for fall.

- 2 cups heavy cream
- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 6 large egg yolks
- 1/4 cup brown sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C).
- In a saucepan, combine heavy cream, pumpkin puree, granulated sugar, vanilla extract, and pumpkin pie spice. Heat over medium heat until just simmering.
- In a bowl, whisk the egg yolks until smooth.
- Slowly pour the warm cream mixture into the egg yolks, whisking constantly to prevent curdling.
- Strain the mixture through a fine-mesh sieve into a large measuring cup.
- Pour the mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.
- Remove from the oven and let cool. Refrigerate for at least 2 hours or overnight.
- Before serving, sprinkle brown sugar on top of each crème brûlée and use a kitchen torch to caramelize the sugar until golden and crispy.
Notes
- For a stronger pumpkin flavor, use more pumpkin puree.
- Make sure to let the crème brûlée cool completely before adding the sugar topping.
- Use a kitchen torch for best results when caramelizing the sugar.
