- 1.5 lbs pork tenderloin
- 1 cup cranberry sauce
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix cranberry sauce, brown sugar, Dijon mustard, garlic powder, onion powder, salt, and pepper.
- Rub the pork tenderloin with olive oil and season with salt and pepper.
- Place the pork in a baking dish and pour the cranberry glaze over it.
- Bake for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
- Let the pork rest for 5 minutes before slicing.
- Serve with additional cranberry glaze if desired.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the glaze.
- Serve with roasted vegetables or mashed potatoes for a complete meal.
