Description

Delicious tacos filled with grilled chicken and fresh pineapple salsa, perfect for summer gatherings.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. Combine the olive oil, garlic powder, chili powder, cumin, salt, and pepper in a bowl to create a spice paste.
  3. Coat the chicken breasts with the spice mixture.
  4. Grill the chicken for about 6-7 minutes per side until fully cooked (165°F).
  5. Remove the chicken from the grill and let it rest before slicing.
  6. Mix the diced pineapple with red onion and cilantro in a separate bowl.
  7. Warm the corn tortillas on the grill for about 1 minute per side.
  8. Assemble the tacos by layering grilled chicken and pineapple salsa in each tortilla.
  9. Serve with lime wedges to squeeze over the tacos.

Notes

Marinate the chicken for 30 minutes for enhanced flavor. The pineapple salsa can be made ahead of time.
