- 1 lb boneless, skinless chicken breasts
- 1 cup fresh pineapple, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 small corn tortillas
- 1/2 cup red onion, finely chopped
- 1/2 cup cilantro, chopped
- Lime wedges for serving
Instructions
- Preheat the grill to medium-high heat.
- Combine the olive oil, garlic powder, chili powder, cumin, salt, and pepper in a bowl to create a spice paste.
- Coat the chicken breasts with the spice mixture.
- Grill the chicken for about 6-7 minutes per side until fully cooked (165°F).
- Remove the chicken from the grill and let it rest before slicing.
- Mix the diced pineapple with red onion and cilantro in a separate bowl.
- Warm the corn tortillas on the grill for about 1 minute per side.
- Assemble the tacos by layering grilled chicken and pineapple salsa in each tortilla.
- Serve with lime wedges to squeeze over the tacos.
Notes
Marinate the chicken for 30 minutes for enhanced flavor. The pineapple salsa can be made ahead of time.
