Description
A vibrant and comforting dish that combines savory chicken, zesty pineapple, and creamy peanut sauce, all served over fluffy rice.
Ingredients
Scale
- 1 pound chicken breast, diced
- 1 cup uncooked rice
- 1 can (about 14 ounces) pineapple chunks, drained
- 1 cup peanut sauce
- 1 tablespoon soy sauce
- 1 bell pepper, diced
- 1 onion, diced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat the oil: In a large skillet, pour in the vegetable oil and set over medium heat.
- Cook the chicken: Add the diced chicken, seasoning it lightly with salt and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
- Sauté vegetables: Stir in the diced onion and bell pepper, allowing them to soften for about 3-4 minutes.
- Add rice and pineapple: Toss in the uncooked rice, pineapple chunks, peanut sauce, and soy sauce. Mix well to combine.
- Pour in the water: Add 2 cups of water to the skillet, stirring gently to combine.
- Simmer: Bring the mixture to a gentle simmer. Cover the skillet, reduce the heat to low, and allow everything to cook for about 20 minutes.
- Fluff and serve: Once cooked, remove the lid, fluff the rice with a fork, and season with salt and pepper. Garnish with chopped green onions.
Notes
Make the chicken and chop vegetables in advance to reduce preparation time. Experiment with customizations like snap peas or shrimp.
