Description
A delightful dish that combines succulent chicken, juicy pineapple, and vibrant bell peppers, served over creamy rice for a tropical culinary adventure.
Ingredients
Scale
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup pineapple chunks
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 bell pepper, diced
- 1 onion, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 3-4 minutes.
- Add the chicken pieces, seasoning with salt and pepper. Cook until golden brown and fully cooked, roughly 5-6 minutes.
- Stir in the pineapple chunks and soy sauce, letting it simmer for an additional 2 minutes.
- Prepare the rice in a separate pot according to package instructions, using chicken broth instead of water.
- Fluff the rice with a fork and mix it into the chicken and pineapple mixture.
- Serve warm, garnished with chopped green onions.
Notes
Pat the chicken dry before cooking for better searing. Drain canned pineapple well to avoid excess moisture.
