  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 3-4 minutes.
  2. Add the chicken pieces, seasoning with salt and pepper. Cook until golden brown and fully cooked, roughly 5-6 minutes.
  3. Stir in the pineapple chunks and soy sauce, letting it simmer for an additional 2 minutes.
  4. Prepare the rice in a separate pot according to package instructions, using chicken broth instead of water.
  5. Fluff the rice with a fork and mix it into the chicken and pineapple mixture.
  6. Serve warm, garnished with chopped green onions.

Notes

Pat the chicken dry before cooking for better searing. Drain canned pineapple well to avoid excess moisture.
