  • 4 large bell peppers
  • 1 cup pimiento cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced green onions
  • 1/4 cup diced jalapeños (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a mixing bowl, combine pimiento cheese, shredded cheddar cheese, green onions, jalapeños, olive oil, salt, and pepper.
  4. Stuff each bell pepper with the cheese mixture.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 25-30 minutes, or until the peppers are tender.
  7. Remove the foil and bake for an additional 5-10 minutes to brown the tops.
  8. Let cool slightly before serving.
