- 4 large bell peppers
- 1 cup pimiento cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced green onions
- 1/4 cup diced jalapeños (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a mixing bowl, combine pimiento cheese, shredded cheddar cheese, green onions, jalapeños, olive oil, salt, and pepper.
- Stuff each bell pepper with the cheese mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes, or until the peppers are tender.
- Remove the foil and bake for an additional 5-10 minutes to brown the tops.
- Let cool slightly before serving.
Notes
- Feel free to customize the cheese mixture with your favorite cheeses.
- For a spicier version, add more jalapeños or use spicy pimiento cheese.
