Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine rolled oats, peanut butter, honey or maple syrup, cocoa powder, vanilla extract, and salt.
  3. Mix until well combined and the mixture is sticky.
  4. If using, fold in the chocolate chips.
  5. Line a muffin tin with paper liners or grease it lightly.
  6. Scoop the mixture into the muffin tin, filling each cup about 3/4 full.
  7. Bake for 10-12 minutes or until the edges are firm.
  8. Allow to cool before removing from the tin.
