Ingredients

- 1 cup peanut butter
- 2 ripe bananas, mashed
- 2 cups oats
- 1/2 cup honey or maple syrup
- 1/2 cup protein powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup milk (or non-dairy alternative)
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the peanut butter and mashed bananas until smooth.
- Add in the honey (or maple syrup), milk, and vanilla extract, and mix well.
- In another bowl, combine the oats, protein powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into a greased muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before removing from the tin.
Notes
- Store muffins in an airtight container for up to a week.
- These muffins can be frozen for longer storage.
- Feel free to add chocolate chips or nuts for extra flavor.
