- 1 tbsp granulated sugar
- 2 tbsp butter, melted
- 1 cup graham crackers, crushed
- ½ cup heavy whipped cream
- 16 oz (2 blocks) softened cream cheese
- 1 tsp pure vanilla extract
- ½ cup powdered sugar
- 1 tbsp lemon juice
- ¼ cup packed brown sugar
- 1 tbsp cornstarch
- ½ tsp ground nutmeg
- 1 cup peaches, sliced (canned or fresh)
- 1 tsp ground cinnamon
- 1 tbsp brown sugar
- ½ cup crushed wafers (vanilla or graham)
- 2 tbsp butter, melted
- ¼ cup caramel topping
Instructions
- Preheat your oven to 325°F (163°C).
- Mix the crushed graham crackers, melted butter, and granulated sugar. Press into mini cheesecake pans or muffin trays.
- Beat the softened cream cheese until creamy. Gradually add powdered sugar and vanilla, mixing until smooth.
- Whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
- Combine sliced peaches, brown sugar, cinnamon, nutmeg, and lemon juice in a saucepan over medium heat. Mix cornstarch with water, then add to peaches. Cook until thickened.
- Spread the cheesecake filling over the cooled crust, spoon the peach mixture on top, and cover with more cheesecake filling.
- Refrigerate for at least 4 hours.
- Mix crushed wafers with melted butter and brown sugar for the topping.
- Top the cheesecakes with fresh peach slices, crumble topping, and drizzle with caramel before serving.
Notes
For best results, refrigerate overnight. You can customize with other fruit or spices according to your taste.
