  • 1 teaspoon cinnamon
  • ½ cup brown sugar
  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ¼ cup sugar
  • ½ cup unsalted butter, softened

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese, granulated sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. In another bowl, combine sliced peaches, cinnamon, brown sugar, flour, oats, and softened butter to create the cobbler topping.
  7. Spread the peach mixture over the cheesecake layer.
  8. Bake for 50-60 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 4 hours before serving.
