- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened

- 3 large eggs
- 2 cups fresh peaches, peeled and sliced
- 1 teaspoon cinnamon
- ½ cup brown sugar
- 1 cup all-purpose flour
- ½ cup rolled oats
- ¼ cup sugar
- ½ cup unsalted butter, softened
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese, granulated sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust in the springform pan.
- In another bowl, combine sliced peaches, cinnamon, brown sugar, flour, oats, and softened butter to create the cobbler topping.
- Spread the peach mixture over the cheesecake layer.
- Bake for 50-60 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- For best results, use ripe peaches.
- This cheesecake can be made a day in advance.
- Serve with whipped cream for added flavor.
