Ingredients

  • 4 cups fresh peaches, peeled and chopped
  • 1 cup sugar
  • 1/4 cup apple cider vinegar
  • 23 chipotle peppers in adobo sauce, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. In a large pot, combine the chopped peaches, sugar, and apple cider vinegar. Stir well.
  2. Add the minced chipotle peppers, lemon juice, cinnamon, and salt to the pot.
  3. Bring the mixture to a boil over medium heat, stirring frequently.
  4. Once boiling, reduce the heat and let it simmer for about 30-40 minutes, or until the mixture thickens.
  5. Pour the hot jam into sterilized jars and seal them immediately.
  6. Let the jars cool to room temperature before storing them in the refrigerator.
