Ingredients

  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract (for filling)
  • Pinch of salt (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2 minutes.
  3. Add in the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually mix this into the wet ingredients on low speed until a thick dough forms.
  5. Add the milk and mix until fully incorporated.
  6. Divide the dough into five equal portions and tint each with gel food coloring.
  7. Scoop about 1 tablespoon of dough for each cookie, roll into balls, and place on the prepared baking sheet, spacing 2 inches apart.
  8. Bake for 8-10 minutes until edges are set and tops are slightly cracked. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. For the filling, beat the softened butter until smooth. Gradually add powdered sugar, heavy cream (or milk), vanilla extract, and a pinch of salt until fluffy.
  10. Assemble by matching cooled cookies in pairs, spreading filling on the flat side of one and topping with another.
  11. Let sandwiches sit for 10 minutes before serving.

Notes

Refrigerate cookie dough for up to 3 days or freeze baked cookies for up to 3 months. Use an air fryer at 300°F for 6-8 minutes for an alternative cooking method.
