Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2 minutes.
- Add in the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually mix this into the wet ingredients on low speed until a thick dough forms.
- Add the milk and mix until fully incorporated.
- Divide the dough into five equal portions and tint each with gel food coloring.
- Scoop about 1 tablespoon of dough for each cookie, roll into balls, and place on the prepared baking sheet, spacing 2 inches apart.
- Bake for 8-10 minutes until edges are set and tops are slightly cracked. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- For the filling, beat the softened butter until smooth. Gradually add powdered sugar, heavy cream (or milk), vanilla extract, and a pinch of salt until fluffy.
- Assemble by matching cooled cookies in pairs, spreading filling on the flat side of one and topping with another.
- Let sandwiches sit for 10 minutes before serving.
Notes
Refrigerate cookie dough for up to 3 days or freeze baked cookies for up to 3 months. Use an air fryer at 300°F for 6-8 minutes for an alternative cooking method.
