- 12 taco shells
- 1 lb ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1/2 cup chopped onions
- 1/4 cup chopped cilantro
- 1 avocado, sliced (for topping)
- Sour cream (for serving)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir to combine and heat through.
- Place taco shells in a baking dish and fill each shell with the beef mixture.
- Top each filled taco with shredded cheese.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped onions, cilantro, and avocado slices.
- Serve with sour cream on the side.
