  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1/2 cup chopped onions
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced (for topping)
  • Sour cream (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir to combine and heat through.
  4. Place taco shells in a baking dish and fill each shell with the beef mixture.
  5. Top each filled taco with shredded cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and garnish with chopped onions, cilantro, and avocado slices.
  8. Serve with sour cream on the side.
