Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  3. Add chicken to the skillet and cook until browned on both sides, about 5-7 minutes per side.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add chicken broth and bring to a simmer.
  6. Stir in heavy cream and sun-dried tomatoes, then add spinach and cook until wilted.
  7. Return chicken to the skillet and simmer for an additional 5-10 minutes until cooked through.
  8. Serve warm and enjoy!

  • For a lighter version, substitute heavy cream with coconut milk.
