Ingredients

  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce
  • 1 each Red and Yellow Bell Pepper, chopped
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes, halved
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss together the sliced kielbasa, chopped bell peppers, baby carrots, and halved potatoes on a large baking sheet.
  3. Drizzle with olive oil, and season with salt and pepper to taste.
  4. Mix everything to ensure all ingredients are coated.
  5. Whisk together honey, minced garlic, and soy sauce in a separate bowl.
  6. Pour the marinade over the kielbasa and veggies, tossing to coat.
  7. Spread the mixture out evenly on the baking sheet.
  8. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  9. Remove from oven and sprinkle with fresh parsley or green onions before serving hot.
