- 1 pound Baby Potatoes, halved
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Toss together the sliced kielbasa, chopped bell peppers, baby carrots, and halved potatoes on a large baking sheet.
- Drizzle with olive oil, and season with salt and pepper to taste.
- Mix everything to ensure all ingredients are coated.
- Whisk together honey, minced garlic, and soy sauce in a separate bowl.
- Pour the marinade over the kielbasa and veggies, tossing to coat.
- Spread the mixture out evenly on the baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through.
- Remove from oven and sprinkle with fresh parsley or green onions before serving hot.
