- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup powdered sugar
- 8 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
- ½ cup peppermint extract
- Red and green food coloring
Instructions
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a pie dish to form the crust.
- In another bowl, beat the cream cheese and powdered sugar until smooth.
- In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture until well combined.
- Divide the mixture into two bowls. Add peppermint extract and red food coloring to one bowl, and green food coloring to the other.
- Drop spoonfuls of the red and green mixtures into the crust, then use a knife to swirl them together.
- Refrigerate for at least 4 hours or until set.
- Slice and serve chilled, garnished with whipped cream if desired.
Notes
- For a stronger peppermint flavor, increase the amount of peppermint extract.
- Make sure the cream cheese is softened for easier mixing.
- This pie can be made a day in advance for convenience.
