- 3–4 lbs beef roast
- 1 cup balsamic vinegar
- 1/2 cup beef broth
- 1/4 cup brown sugar
- 4 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the beef roast with salt and pepper.
- In a bowl, mix together balsamic vinegar, beef broth, brown sugar, garlic, Worcestershire sauce, and thyme.
- Place the beef roast in the slow cooker and pour the balsamic mixture over it.
- Cover and cook on low for 8 hours or until the beef is tender.
- Once cooked, remove the beef and let it rest before slicing.
- Serve with the sauce and garnish with fresh parsley.
Notes
- For a thicker sauce, remove the beef and simmer the sauce on the stove for a few minutes.
- This dish pairs well with mashed potatoes or steamed vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
