- 1 pound of breakfast sausage
- 1 cup of diced potatoes
- 1 cup of diced bell peppers
- 1 cup of diced onions
- 8 large eggs
- 1 cup of shredded cheese
- Salt and pepper to taste
Instructions
- Brown the breakfast sausage in a skillet over medium heat.
- In a crock pot, layer the diced potatoes, bell peppers, and onions.
- Add the browned sausage on top of the vegetables.
- In a bowl, whisk the eggs and season with salt and pepper.
- Pour the egg mixture over the sausage and vegetables in the crock pot.
- Top with shredded cheese.
- Cover and cook on low for 6-8 hours or until the eggs are set.
Notes
- Feel free to add other vegetables like spinach or mushrooms.
- This dish can be prepared the night before and cooked in the morning.
