Ingredients

  • 1 pound of breakfast sausage
  • 1 cup of diced potatoes
  • 1 cup of diced bell peppers
  • 1 cup of diced onions
  • 8 large eggs
  • 1 cup of shredded cheese
  • Salt and pepper to taste

Instructions

  1. Brown the breakfast sausage in a skillet over medium heat.
  2. In a crock pot, layer the diced potatoes, bell peppers, and onions.
  3. Add the browned sausage on top of the vegetables.
  4. In a bowl, whisk the eggs and season with salt and pepper.
  5. Pour the egg mixture over the sausage and vegetables in the crock pot.
  6. Top with shredded cheese.
  7. Cover and cook on low for 6-8 hours or until the eggs are set.
