Description

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup olives, sliced (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Start by boiling water in your large pot and adding a generous pinch of salt. Once boiling, toss in your pasta. Cook until al dente, then drain and rinse under cold water.
  2. Prep the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, feta, red onion, olives, and parsley. Stir gently.
  3. Make the Vinaigrette: Whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper until smooth.
  4. Combine: Add the cooled pasta to the bowl of vegetables and feta. Drizzle vinaigrette on top.
  5. Toss: Gently mix until everything is coated.
  6. Serve or Chill: Enjoy immediately or refrigerate for 30 minutes to enhance flavors.

Notes
