- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, finely chopped
- 1/4 cup olives, sliced (optional)
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the Pasta: Start by boiling water in your large pot and adding a generous pinch of salt. Once boiling, toss in your pasta. Cook until al dente, then drain and rinse under cold water.
- Prep the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, feta, red onion, olives, and parsley. Stir gently.
- Make the Vinaigrette: Whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper until smooth.
- Combine: Add the cooled pasta to the bowl of vegetables and feta. Drizzle vinaigrette on top.
- Toss: Gently mix until everything is coated.
- Serve or Chill: Enjoy immediately or refrigerate for 30 minutes to enhance flavors.
Notes
