- 2 pounds waxy potatoes (Yukon Gold or red)
- 1 cup crumbled feta cheese
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- Fresh parsley, oregano, or thyme (for garnish)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Clean and cut the potatoes into wedges or cubes.
- In a large mixing bowl, toss the potatoes with olive oil, lemon juice, minced garlic, salt, and pepper.
- Spread the potatoes onto a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, tossing halfway through.
- During the last 5 minutes of cooking, sprinkle the crumbled feta on top.
- Remove from the oven and garnish with fresh herbs before serving.
Notes
For the best results, use waxy potatoes and do not overcrowd the baking sheet for optimal crispiness.
