  • 2 pounds waxy potatoes (Yukon Gold or red)
  • 1 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • Fresh parsley, oregano, or thyme (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Clean and cut the potatoes into wedges or cubes.
  3. In a large mixing bowl, toss the potatoes with olive oil, lemon juice, minced garlic, salt, and pepper.
  4. Spread the potatoes onto a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, tossing halfway through.
  6. During the last 5 minutes of cooking, sprinkle the crumbled feta on top.
  7. Remove from the oven and garnish with fresh herbs before serving.

Notes
