- 2 cups cooked and diced chicken breast
- 8 ounces penne or rotini pasta
- 1 cup halved cherry tomatoes
- 1 medium cucumber, diced
- 1/4 cup finely chopped red onion
- 1 cup feta cheese crumbles
- 1/2 cup pitted kalamata olives
- 3 tablespoons extra virgin olive oil
Instructions
- Sear the chicken: Heat the olive oil in a skillet over medium heat and cook the seasoned chicken until golden brown and fully cooked. Allow to rest and dice.
- Cook the pasta: Bring salted water to a boil and cook pasta according to instructions until al dente. Drain and set aside.
- Chop the vegetables: Dice cucumber, halve tomatoes, and mince red onion.
- Combine ingredients: In a large bowl, mix pasta, chicken, veggies, feta, olives, and fresh herbs.
- Dress it up: Drizzle with olive oil and lemon juice, toss gently, and adjust seasoning.
- Serve chilled: Allow to chill for at least 30 minutes before serving.
Notes
This salad gets better the next day. Be sure not to overcook the chicken and avoid rinsing the pasta.
