Delicious Mediterranean Chicken Gyros wrapped in warm pita with grilled chicken, fresh veggies, and creamy feta tzatziki.


Ingredients

  • 2 pounds chicken thighs or breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup lemon juice
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup cucumbers, grated
  • 1 cup Greek yogurt
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh dill, chopped
  • 1 cup red onion, sliced
  • 1 cup tomatoes, diced

Instructions

  1. Marinate the chicken: In a large bowl, combine chicken with olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Coat well and refrigerate for at least 30 minutes.
  2. Cook the chicken: Preheat your grill or skillet over medium-high heat. Cook chicken for about 6-7 minutes per side, until juices run clear and internal temperature is 165°F (75°C). Let rest before slicing.
  3. Prepare the tzatziki: Grate cucumbers, squeeze out moisture. In a bowl, mix Greek yogurt, grated cucumber, crumbled feta, chopped dill, and a pinch of salt until creamy.
  4. Assemble the gyros: Warm pita bread in a skillet, lay sliced chicken, top with tzatziki, diced tomatoes, sliced onions, and additional cucumbers.
  5. Serve and enjoy: Fold pita around fillings and relish the flavors.
