- 2 pounds chicken thighs or breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup lemon juice
- 2 teaspoons dried oregano
- Salt and pepper to taste
- 4 pita breads
- 1 cup cucumbers, grated
- 1 cup Greek yogurt
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh dill, chopped
- 1 cup red onion, sliced
- 1 cup tomatoes, diced
Instructions
- Marinate the chicken: In a large bowl, combine chicken with olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Coat well and refrigerate for at least 30 minutes.
- Cook the chicken: Preheat your grill or skillet over medium-high heat. Cook chicken for about 6-7 minutes per side, until juices run clear and internal temperature is 165°F (75°C). Let rest before slicing.
- Prepare the tzatziki: Grate cucumbers, squeeze out moisture. In a bowl, mix Greek yogurt, grated cucumber, crumbled feta, chopped dill, and a pinch of salt until creamy.
- Assemble the gyros: Warm pita bread in a skillet, lay sliced chicken, top with tzatziki, diced tomatoes, sliced onions, and additional cucumbers.
- Serve and enjoy: Fold pita around fillings and relish the flavors.
