Ingredients

- 1 can chickpeas, drained and rinsed
- 2 cups kale, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and minced garlic, sauté until translucent.
- Add cumin and paprika, stir for 1 minute.
- Add chickpeas, diced tomatoes, and vegetable broth, bring to a boil.
- Reduce heat and let simmer for 15 minutes.
- Add chopped kale and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- For a spicier version, add red pepper flakes.
- This soup can be stored in the refrigerator for up to 3 days.
