Description

Ingredients

  • 4 salmon fillets
  • 1/4 cup maple syrup
  • 2 tablespoons sriracha sauce
  • 1 ripe mango, diced
  • 1/4 red onion, diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 2 cups cooked rice
  • 1 cup mixed veggies (bell peppers, cucumbers)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the salmon fillets into bite-sized pieces and season with salt and pepper.
  2. Combine maple syrup and sriracha in a bowl. Toss the salmon bites in the glaze until well coated.
  3. Line a baking sheet with parchment paper and arrange the glazed salmon in a single layer. Bake for 12-15 minutes until flaked easily.
  4. Prepare the mango salsa by mixing diced mango, red onion, cilantro, lime juice, and salt in a bowl.
  5. Cook the rice according to package instructions and let cool slightly.
  6. Assemble the bowl with rice, salmon bites, mango salsa, and mixed veggies for a colorful presentation.
