Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squash in half and scoop out the seeds.
- Slice the squash into 1-inch thick slices.
- In a bowl, mix maple syrup, olive oil, cinnamon, salt, and pepper.
- Toss the squash slices in the mixture until well coated.
- Arrange the slices on a baking sheet lined with parchment paper.
- Roast in the oven for 25-30 minutes, flipping halfway through, until tender and caramelized.
