Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes or until the edges are set. Let cool completely.
  7. For the filling, beat together the softened butter, powdered sugar, and maple syrup until creamy.
  8. Spread a generous amount of filling on the flat side of one cookie and sandwich it with another cookie.
  9. Repeat with remaining cookies and filling.
