Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup mango puree
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 1/2 cup raspberry puree

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust by blending flour, powdered sugar, and butter until resembling coarse crumbs. Pat into an 8×8-inch greased baking pan. Bake for 15-20 minutes until golden brown.
  3. Create the curd by whisking together mango puree, granulated sugar, eggs, lemon juice, lemon zest, and salt until smooth.
  4. Pour the mango filling over the baked crust, then swirl in raspberry puree with a knife.
  5. Bake for another 20-25 minutes until the filling is set but slightly jiggly.
  6. Cool completely on a wire rack before slicing into squares.

Notes

These bars can be made ahead of time and are great served with vanilla ice cream or fresh mint tea.
