- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup mango puree
- 1/2 cup granulated sugar
- 3 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 1/2 cup raspberry puree
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust by blending flour, powdered sugar, and butter until resembling coarse crumbs. Pat into an 8×8-inch greased baking pan. Bake for 15-20 minutes until golden brown.
- Create the curd by whisking together mango puree, granulated sugar, eggs, lemon juice, lemon zest, and salt until smooth.
- Pour the mango filling over the baked crust, then swirl in raspberry puree with a knife.
- Bake for another 20-25 minutes until the filling is set but slightly jiggly.
- Cool completely on a wire rack before slicing into squares.
