Instructions
- In a saucepan, heat the heavy cream until it begins to simmer.
- Remove from heat and add chocolate chips and vanilla extract, stirring until smooth.
- Let the mixture cool, then refrigerate for about 1 hour until firm.
- Once firm, scoop out small portions and roll them into balls.
- Roll the truffles in crushed peppermint candies, powdered sugar, or cocoa powder.
- Place the truffles on a baking sheet and refrigerate until ready to serve.
