  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and bake the potatoes for about 1 hour until tender.
  2. Once baked, let the potatoes cool slightly, then peel and dice them.
  3. In a large pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
  4. Gradually whisk in the chicken broth and milk, cooking until the mixture thickens.
  5. Add the diced potatoes, cheddar cheese, sour cream, and half of the bacon. Stir until the cheese is melted and everything is well combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with the remaining bacon and chopped green onions.
