- 4 large russet potatoes
- 2 cups pulled pork
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup cooked bacon bits
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the russet potatoes, then poke holes in them with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Bake the potatoes in the preheated oven for about 45-60 minutes, or until tender.
- While the potatoes are baking, heat the pulled pork in a saucepan over medium heat.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut a slit in the top of each potato and gently squeeze the sides to open them up.
- Fluff the insides of the potatoes with a fork and season with salt and pepper.
- Top each potato with pulled pork, shredded cheese, sour cream, green onions, and bacon bits.
- Serve immediately and enjoy!

- For a spicier kick, add jalapeños or hot sauce as a topping.
