Ingredients

  • 4 large russet potatoes
  • 2 cups pulled pork
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup cooked bacon bits
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the russet potatoes, then poke holes in them with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Bake the potatoes in the preheated oven for about 45-60 minutes, or until tender.
  5. While the potatoes are baking, heat the pulled pork in a saucepan over medium heat.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly.
  7. Cut a slit in the top of each potato and gently squeeze the sides to open them up.
  8. Fluff the insides of the potatoes with a fork and season with salt and pepper.
  9. Top each potato with pulled pork, shredded cheese, sour cream, green onions, and bacon bits.
  10. Serve immediately and enjoy!
