Ingredients

- 1 cup cooked lentils
- 1 cup grated carrots
- 1/2 cup chopped onions
- 1/4 cup flour (or gluten-free flour)
- 1/4 cup breadcrumbs
- 1 egg (or flax egg for vegan option)
- 1 tsp cumin powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Oil for frying
Instructions
- In a large bowl, combine cooked lentils, grated carrots, and chopped onions.
- Add flour, breadcrumbs, egg, cumin powder, salt, and black pepper to the mixture.
- Mix well until all ingredients are combined.
- Heat oil in a frying pan over medium heat.
- Form the mixture into small patties and fry them until golden brown on both sides.
- Remove from the pan and place on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
Notes
- For a vegan option, replace the egg with a flax egg (1 tbsp flaxseed meal + 2.5 tbsp water).
- These fritters can be baked instead of fried for a healthier option.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
