A delightful Lemon Tiramisu featuring layers of lemon-infused mascarpone and delicate ladyfingers, perfect for any occasion.
Ingredients

- ¾ cup freshly-squeezed lemon juice
- ¾ cup water
- 1 ¼ cup granulated sugar
- 3 tablespoons lemon zest
- 7 egg yolks & 1 whole egg
- ½ cup lemon juice
- ⅛ teaspoon salt
- 5 tablespoons unsalted butter, cut into half-inch pieces
- 1 ⅓ cup heavy cream
- 16 ounces mascarpone cheese
- ¾ cup granulated sugar
- ½ cup lemon syrup
- 1 teaspoon vanilla
- 1 (7 oz) package savoiardi ladyfingers (about 24)
Instructions
- In a saucepan, combine lemon juice, water, and granulated sugar. Gently bring to a simmer over medium heat and stir until sugar dissolves. Remove from heat and cool.
- Chill your mixing bowl in the fridge. In the bowl, beat heavy cream until soft peaks form (3-5 minutes with an electric mixer).
- In another bowl, whisk together mascarpone cheese, granulated sugar, lemon juice, and lemon zest until creamy.
- Gently fold the whipped cream into the mascarpone mixture.
- Dip each ladyfinger in the cooled lemon syrup and layer them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of ladyfingers and remaining mascarpone.
- Cover and refrigerate for at least 4 hours or preferably overnight.
Notes
For a make-ahead option, prepare the tiramisu a day in advance.
