Description

A delightful Lemon Tiramisu featuring layers of lemon-infused mascarpone and delicate ladyfingers, perfect for any occasion.


Ingredients

  • ¾ cup freshly-squeezed lemon juice
  • ¾ cup water
  • 1 ¼ cup granulated sugar
  • 3 tablespoons lemon zest
  • 7 egg yolks & 1 whole egg
  • ½ cup lemon juice
  • ⅛ teaspoon salt
  • 5 tablespoons unsalted butter, cut into half-inch pieces
  • 1 ⅓ cup heavy cream
  • 16 ounces mascarpone cheese
  • ¾ cup granulated sugar
  • ½ cup lemon syrup
  • 1 teaspoon vanilla
  • 1 (7 oz) package savoiardi ladyfingers (about 24)

Instructions

  1. In a saucepan, combine lemon juice, water, and granulated sugar. Gently bring to a simmer over medium heat and stir until sugar dissolves. Remove from heat and cool.
  2. Chill your mixing bowl in the fridge. In the bowl, beat heavy cream until soft peaks form (3-5 minutes with an electric mixer).
  3. In another bowl, whisk together mascarpone cheese, granulated sugar, lemon juice, and lemon zest until creamy.
  4. Gently fold the whipped cream into the mascarpone mixture.
  5. Dip each ladyfinger in the cooled lemon syrup and layer them in a dish.
  6. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of ladyfingers and remaining mascarpone.
  7. Cover and refrigerate for at least 4 hours or preferably overnight.

Notes

For a make-ahead option, prepare the tiramisu a day in advance.
