- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- ½ cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 3 egg whites
- ¼ teaspoon cream of tartar
- ½ cup powdered sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a cheesecake pan.
- In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the lemon juice, lemon zest, and vanilla extract until fully incorporated.
- Pour the cheesecake mixture over the crust and bake for 25-30 minutes, or until set.
- While the cheesecake is baking, prepare the meringue by beating the egg whites and cream of tartar until soft peaks form.
- Gradually add the powdered sugar and continue to beat until stiff peaks form.
- Once the cheesecake is done, remove it from the oven and spread the meringue on top.
- Bake for an additional 10 minutes, or until the meringue is golden brown.
- Let it cool before refrigerating for at least 4 hours before serving.
Notes
- For a stronger lemon flavor, add more lemon zest.
- Ensure the cream cheese is at room temperature for a smoother batter.
- Store leftovers in the refrigerator for up to 3 days.
