  • 3 egg whites
  • ¼ teaspoon cream of tartar
  • ½ cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a cheesecake pan.
  3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the lemon juice, lemon zest, and vanilla extract until fully incorporated.
  6. Pour the cheesecake mixture over the crust and bake for 25-30 minutes, or until set.
  7. While the cheesecake is baking, prepare the meringue by beating the egg whites and cream of tartar until soft peaks form.
  8. Gradually add the powdered sugar and continue to beat until stiff peaks form.
  9. Once the cheesecake is done, remove it from the oven and spread the meringue on top.
  10. Bake for an additional 10 minutes, or until the meringue is golden brown.
  11. Let it cool before refrigerating for at least 4 hours before serving.
