  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 can (14 oz) sweetened condensed milk
  • 3 large egg yolks
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press the mixture into the bottom of a pie dish to form the crust.
  3. Bake the crust for 8-10 minutes until lightly golden, then let it cool.
  4. In a separate bowl, whisk together the granulated sugar, lemon juice, lemon zest, sweetened condensed milk, and egg yolks until smooth.
  5. Pour the lemon filling into the cooled crust and refrigerate for at least 4 hours or until set.
  6. Before serving, whip the heavy cream with powdered sugar until soft peaks form, then spread or pipe it over the pie.
  7. Garnish with additional lemon zest if desired and serve chilled.
