Description
A refreshing and nutritious salad featuring couscous, chickpeas, and cucumber, dressed with a zesty lemon herb vinaigrette.
Ingredients

- 1 cup couscous
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring 1 1/4 cups of water to a boil.
- Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff couscous with a fork and let it cool.
- In a large bowl, combine chickpeas, cucumber, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Add the cooled couscous to the chickpea mixture and pour the dressing over it.
- Toss everything together until well combined.
- Serve chilled or at room temperature.
Notes
- For added flavor, consider adding feta cheese.
- This salad can be made a day in advance for better flavor.
